Most ingredients that call for eggs just call for egg whites -- which serve to add a little weight and froth to the cocktail without changing the dynamic or composition too much. (A noticeable exception to this is egg nog, where you want the entire egg to get as much creaminess as possible, and the Porto Flip which is just kinda weird.)
