Mezcal Flip

Equal parts smoke and velvet.

  • 34% ABV
  • Garnish with sage and smoked paprika

Mezcal 5.25cl 1.75oz
Maple syrup 1.5cl 0.5oz
Lemon juice 1.5cl 0.5oz
Apricot liqueur 0.75cl 0.25oz
Salt Sea salt; one pinch
Egg One egg yolk
Use ounces
Use centiliters


  1. Shake all ingredients.
  2. Strain into a coupe.


This cocktail inverts a lot of traditional mezcal elements: the smokiness is balanced out by the apricot and maple, the crispness by the egg and salt. It's a true flip in that regard, but it's worth tinkering with the ratios to see if you prefer a mezcal-forward version or merely a mezcal-carrying version.
