This cocktail -- a play on the word saffron, given the prominence of saffron gin -- comes to us from Spyros Patsialos. He writes:
The Saf Run cocktail kills a number of birds with one stone. In particular, it is very well-balanced with a lot of contrasting flavors and long finish. This is an amazingly delicious and delicate short drink cocktail with great floral and herbal notes. The lime’s acidity balances perfectly the sweetness of the rose syrup while Underberg marries in a beautiful way with the Saffron gin.
Obviously both Underberg and saffron gin are fairly niche bottles. You can definitely substitute the saffron gin for a London Dry or an Old Tom (in fact, it's kind of fun to see how the drink responds), but the lone barspoon of Underberg is really the key.
