Test Pilot

A sweet, multi-faceted, and delicious two-rum tiki.

Tuxedo No. 2



Dark rum 4.5cl 1.5oz
White rum 2.0cl 0.67oz
Falernum 1.5cl 0.5oz
Triple sec Cointreau x 1.5cl 0.5oz
Lime juice 1.5cl 0.5oz
Angostura bitters One dash
Absinthe One dash
Use ounces
Use centiliters


  1. Combine all ingredients with a cup of crushed ice in a blender.
  2. Blend for five seconds.
  3. Pour, unstrained, over crushed ice.


The test pilot is complicated, but does not require finesse. So many voices are in this choir, a couple flat notes won’t be noticed. Light and dark rums are requested, but if this drink were prepared with only one rum, angels wouldn’t lose wings (though they might kindly recommend a second rum). For bigger bars, we prefer combining a smooth, team-playing label like Plantation 3-Star with something dark and buttery, such as Smith and Cross or Goslings. If this drink takes a nose dive, it will be with absinthe, so take it easy.
